Even though in North America, people usually look to this thirst quencher in hot summer days, there's always a jug of artichoke iced tea in our fridge year round."
INGREDIENTS
2 large or 3-4 small artichokes
1 bunch of fresh pandan leaves, about 100g
1 lb fresh sugar canes (optional)
5L water
DIRECTIONS
In a large pot, bring 5L of water to a boil, then add all ingredients. Cover and reduce heat to medium and let simmer for 1 hour, then reduce heat again to low-medium and let simmer for another 2 hours. Allow pot to cool completely before transfering to containers and store in fridge and/or freezer. The sugar canes will subtly sweeten your drink; and be sure to keep the boiled sugar canes for a delightful treat. Discard artichokes and pandan leaves.
NOTE:
*if you must substitute fresh pandan leaves with frozen ones, be sure to use double the amount.
*if you cannot find fresh sugar canes, please do not use this ingredient as packaged ones tend to spoil the aroma and taste of this drink. Instead, use sugar or any type of sweetener you'd prefer.
*DO NOT try to squeeze juice out of artichokes before discarding them because this will also spoil the taste of the tea.
